His acupuncture technique for pediatric neurological rehabilitation has been included in the pediatric guidelines of Chinese Traditional Medicine. He has published 288 papers and obtained 6 national invention patents. Professor Liu has trained 25 doctoral and master students. He has trained 260 medical talents for children rehabilitation in China. He has authored books such as Atlas of Early Intervention Training for Children's Brain Development, Practical Acupuncture Science for Children, and Rehabilitation Training for Children with Motor retardation. Professor Liu was awarded the Lifetime Achievement Award and the Golden Needle Award in World Traditional Medicine. He was honored young and middle-aged experts with outstanding contributions by the Ministry of Health of China. Professor Liu was included in the Cambridge University Dictionary of Who's Who in the World in 1996.

Dr. Xu is a Chair Professor in Beijing Normal University-Hong Kong Baptist University United International College (UIC, a full English teaching college in China), Fellow of the Royal Society of Chemistry, Zhuhai Scholar Distinguished Professor, Department Head of Department of Life Sciences, Program Director of Food Science and Technology Program, author of over 300 peer-reviewed papers. Dr. Xu received Ph.D. in Food Science from Chungnam National University, South Korea. He conducted postdoctoral research work in North Dakota State University (NDSU), Purdue University, and Gerald P. Murphy Cancer Foundation in USA during 2005-2009. He did short-term visiting research in NDSU in 2012, and University Georgia in 2014, and followed by visiting research during his sabbatical leave (7months) in Pennsylvania State University in USA in 2016. Dr. Xu is serving as Associate Editor-in-Chief of Food Science and Human Wellness, Associate Editor of Food Research International, Associate Editor of Food Frontiers, and the editorial board member of around 10 international journals. He received inaugural President’s Award for Outstanding Research of UIC in 2016, President’s Award for Outstanding Service of UIC in 2020. Dr. Xu has been listed in the world's top 2% scientists by Stanford University in 2020, 2021, 2022, and has been listed in the Best Scientist in the world in the field of Biology and Biochemistry at Research.com in 2023.

Professor Byong H. Lee was a Research Advisor at Handong Global University (HEM Pharma Laboratory) in Korea (April 2022 -February 2023), former Advisor at SportBiomics (CA, USA) and Heilenex Pharma Inc. (Toronto, Canada). Byong has worked as Professor (AAFC Chair) in Departments of Microbiology/Immunology and Food Science/Agric Chemistry (1986-2011) at McGill University in Montreal, Canada. He has been an Invited Distinguished Professor in the Department of Food Science and Biotechnology at Kangwon National University and Advisor at MSC Co. Ltd (2014-2019) in Korea. In addition, Byong has also worked as Distinguished Professor in Schools of Biotechnology and Food Technology at China Jiangnan University (2011-2014) and Principal Scientist and Head of Biotechnology at Food R/D Center at Agriculture and Agri-Food Canada, AAFC (1982-1986) and Research Director at Sensient Flavor (Former Champlain Industry, 1980-1982) in Canada. Byong received his degrees at the University of British Columbia (Microbiology/Immunology), McGill University (Food Microbiology) and Laval University (PhD, Food Biotechnology) in Canada. Byong also studied his PhD for two years in Microbiology/Immunology at the University of Pennsylvania/Hahnemann Medical College in Philadelphia (US) as his Canada-US exchange program. Byong spent his sabbaticals as an Invited Professor in the UK (Food Research Institute/U. of Reading, 1991-1992), France (INRA/U. de Bourgone, 1997-1998), Ireland (Teagasc Food Research Centre, 2001-2002) and Korea (Seoul National University, 2007-2008).

Prof. Dr. Stanley Brul is the Chair of Molecular Biology and Microbial Food Safety at SILS, University of Amsterdam (UvA). Prof. Brul specializes in biochemistry, molecular biology, and molecular stress physiology of microorganisms. His expertise extends to the study of the microbiome, specifically focusing on beneficial and pathogenic microorganisms, particularly Bacilli. Throughout his scientific career, Prof. Brul has held various positions and undertaken significant projects. He served as a post-doctoral researcher at the University of Nijmegen and the Dutch Science Council NWO-NATO-Talent stipendium, which allowed him to conduct research at the Rockefeller University lab of Miklos-Muller and Christian De Duve. Additionally, he worked as a project manager for food preservation at Unilever R&D in the Netherlands and the UK. He has also been involved in preservation programs and technology platforms at Unilever R&D. In 2000, he became a Professor of Industrial Microbiology with an endowed chair at SILS, UvA. He has been a Professor of Molecular Biology and Microbial Food Safety since 2002, initially working part-time as a Senior Scientist at Unilever R&D and later transitioning to a full-time position at SILS, UvA. Prof. Brul holds several academic positions, including being the Research head of the laboratory MBMFS and the Master track coordinator for Medical Biochemistry & Biotechnology (formerly known as Biochemistry & Metabolic Disease) in the Biomedical Sciences department at FNWI & AMC. He is also the Director of the College of Life Sciences, which caters to approximately 1400 students in the Science Faculty at UvA, and the bachelor Biomedical Sciences faculty at AMC. In terms of academic services, Prof. Brul serves on the editorial boards of various esteemed journals, including the International Journal of Molecular Sciences, Food Microbiology, Innov. Food Sci. & Emerg. Technol., FEMS Yeast, Frontiers in Microbiology, Int. J. Mol. Science. He has also served as a guest editor for special issues in Current Opinion Food Science and the International Journal of Food Microbiology. He acts as a referee for journals such as PNAS, Nature, Current Opinion Microbiology, ASM & FEMS Journals, PLoS Biology, J. Proteome Research, and Proteomics. Prof. Brul has been actively involved in evaluation panels for institutions such as NWO, BBSRC, IWT, and EU. He has also served as a co-evaluator for the Dutch Technology Institute (TNO) Life Science Program and the Australian Food Safety Centre. He has chaired evaluation committees for various academic programs and research institutes, including those at the University of Utrecht, Leiden University, Wageningen University, and the Fungal Biodiversity Centre of the Netherlands Royal Dutch Academy of Sciences. He has also contributed as a regular evaluator for Dutch Food Safety Authority policy documents. Furthermore, Prof. Brul has been recognized for his work through awards, prizes, and major grants. He received the Unilever Research Prize lecture in 1998 and was appointed as a Distinguished Research Fellow at the University of Tasmania in 2007. He has secured various grants and funding for projects related to food preservation, bacterial spore germination, targeted inhibition of bacterial spores, antibiotic resistance, microbial food safety, and fungal growth optimization, among others. He has also been involved in initiatives focusing on bioactive compounds from algae and sustainable crop cultivation with microalgae. Prof. Brul's contributions extend to his involvement in scientific organizations and boards. He has served as the chair of the Dutch Institute for Biology (NIBI) since 2009 and was the former president and Federation European Microbiological Societies (FEMS) representative of the Royal Dutch Society for Microbiology from 2003 to 2009. He co-organized the FEMS 2015 Congress of European microbiologists in Maastricht and is a member of the Agri-Food cluster of the Amsterdam Economic Board. Overall, Prof. Dr. Stanley Brul has made significant contributions to the field of molecular biology and microbial food safety through his research, academic positions, and involvement in scientific organizations.

I am Professor of Eukaryotic Microbiology at the University of Nottingham, UK. I have led a continually funded research laboratory for nearly 30 years, with >100 peer-reviewed publications. My research is focused on elucidating effects of stressors such as food preservatives on microbial populations (principally yeasts and filamentous fungi), including impacts on phenotypic diversity and adherence. Using model fungi, I investigate molecular mechanisms of stressor action such as translation-error, and extrapolate that to find novel routes for exploitation, e.g., controlling growth of undesirable fungi such as fungi that spoil foods and infect crops. Current or recent responsibilities include Senior Editor, Fungal Biology (Elsevier); Associate Editor, Fungal Biology Reviews (Elsevier); President 2019-2020, British Mycological Society; previously, BMS Vice-President. Regular conference co-organiser, session chair or speaker. Supervised a total of 30 PhD students (18 as Principal Supervisor). As Principal Investigator I currently manage a portfolio of externally supported research, and have a track record of collaboration in international and multi-disciplinary teams including with industry.

Venkatesh Balan is an Assistant Professor of Biotechnology at the Department of Engineering Technology at University of Houston. His research experience include, protein expression system in microbes, understanding structure and function of protein, producing fuels and chemical from lignocellulosic biomass using chemical pretreatment, enzyme hydrolysis and microbial fermentation, identification of small molecules using spectroscopy techniques. He spent almost twelve and half years at Michigan State University and developed key technologies including: several novel ammonia pretreatment process to produce pretreated agricultural residues useful for producing bio-fuels, bio-chemicals and animal feed, cost effective microbial fermentation process and healthy nutritional products from fungus. Dr. Balan is internationally recognized for his work in the area of understanding synergy operating between enzymes during biomass hydrolysis, developed fast hydrolysis and fermentation process by efficiently recycling enzymes, microbes, Lignin separation and fractionation to produce precursors for biomaterials and finally separation and structure determination of oligosaccharides. Some of his inventions has helped to reduce the cost of producing second generation biofuels and produce healthy food materials.

Jim is co-founder and Chief Scientific Officer of Vydiant, which is developing healthware consisting of a comprehensive knowledge base of factors affecting health and disease and digital tools to deliver holistic personalized recommendations to individuals. He has been developing strategies and methods to target nutrition for improving personal and public health for his entire career. Jim received his PhD from Colorado State University in Biochemistry and Molecular Biology and spent 5 years as a postdoctoral fellow and assistant professor at the Rockefeller University in the laboratory of Gunter Blobel, the 1999 Nobel Laureate in Physiology and Medicine. Jim was a staff and Biochemistry faculty member at the University of Illinois College of Medicine, Director of the Northwestern University Biotechnology Laboratory, and coordinator of Science and Administrative Activities for the National Center for Minority Health and Health Disparities Center of Excellence in Nutritional Genomics at the University of California Davis. From 2007 to 2011, Jim was Director of the Division of Personalized Nutrition and Medicine at the U.S. FDA’s National Center for Toxicological Research (Jefferson, AR) where his team collaborated with the USDA and the Boys, Girls, Adults Community Development Center in Marvell, Arkansas. He was a member of the Executive Committee of NuGO (Nutrigenomics Organization – www.nugo.org) for 8 years and for 5 years was a co-Editor of Genes&Nutrition. His most recent past position was Senior Expert at the Nestle Institute of Health Sciences from 2011 to 2017. Jim’s primary research interest is to obtain, analyze, translate, and apply health information to promote individual and public health.

I am Thamer Al Mudhehi, holding a Bachelor's degree in Food Studies from King Saud University, Riyadh, Saudi Arabia. I am excited to attend the Food Science and Technology 2024 conference in Frankfurt, Germany, June 3-5, 2024. As a skilled and professional Food Chemist, since 2010, I have been working as a researcher at the Reference Laboratory for Food Chemistry in the Saudi Food and Drug Authority (SFDA) in the Hormones and Antibiotics Section. My 14 years of professional experience in analyzing food allows me to be an expert in organic chemistry techniques.

Dr Sonia Bonacci, Analytical Chemist, PhD, has completed her degree in Chemistry and Pharmaceutical Technology at the University of Calabria in the year 2007, followed by a PhD in Life Science – Curriculum Pharmaceutical Sciences in 2017 at the University Magna Græcia of Catanzaro and then by a degree in Pharmacy in 2018 at the same University. She is currently working as researcher in Food Science and Technologies at the Department of Health Sciences of the University of Catanzaro. She is co-author of 38 papers in peer-review international journals and 1 paper in other. Her research interest includes chemical separation, characterization and quantification of small molecules from agri-food waste matrices, in order to further investigate their biological and pharmacological properties. Her recent interest is focused on the application of bio-active compounds, obtained by agri-food waste matrices, in the formulation of enriched food, testing their effectiveness in conservation and in nutritional and health qualities.

Dr. Concetta Condurso Ph.D. is an assistant professor in Food Science and Technology at the Department of Veterinary Science of the University of Messina (Italy). She earned her BA in Chemistry and her PhDs in Chemical Sciences and in Food Chemistry and Safety at the University of Messina and she was visiting Ph.D. student at Teagasc Food Research Centre, Ireland. Currently, she teaches Food technology, quality and safety, and Technologies for functional food production at Messina University. She has authored more than seventy scientific papers and participated in 64 national and international Congresses and in several financed research projects. Research activities keywords: Sensory quality of processed foods, Volatile profile and key aroma compounds, Shelf-life studies. Development of functional ingredients from food processing by-products.

Aelita Zabulione is a junior researcher at Kaunas University of Technology (KTU) Food institute. With a background in food and medicinal chemistry Aelita is now focusing on novel food safety and alternative sources of organic antimicrobial compounds. In 2021 she was awarded with a prize for „Best invention for future“ at innovation exhibition, where she presented her incredibly realistic and unique pork-like meat analogues from peas. In 2022 Aelita was leading scientist in international consumer engagement labs, which were finalized by creating innovative packaging for take-out foods. This packaging can stand up to 180 °C in the oven, can adjust to size of a meal and is 100% recyclable and compostable. Aelita also was awarded as prestige EU-FORA programme fellow at 6th cohort and now is EU-FORA alumni. During fellowship in 2022-2023 she built wide international scientist network and gained valuable knowledge in understanding processes managed by EFSA.

Dr. Fatemeh Zare is a distinguished expert in the field of food science and technologies, known for her innovative research and practical contributions to the pulse food. She holds a Ph.D. in Food Science and Bioresource Engineering from McGill University in Canada, where she demonstrated her commitment to academic excellence and research innovation. After completing her doctoral studies, Dr. Zare embarked on a dynamic career path that encompassed both postdoctoral research and industrial experience. She honed her skills and expertise while working as a food scientist at the Northern Crops Institute, affiliated with North Dakota State University, Fargo, ND, US. In this role, she played a pivotal role in advancing research and development initiatives focused on pulse ingredients, pulse protein, pulse-supplemented food as well as soybean and cereal grain food product development. She possesses extensive knowledge and experience in Good Manufacturing Practices (GMP), Hazard Analysis and Critical Control Points (HACCP), and overall food safety protocols. Throughout her career, Dr. Zare has been committed to bridging the gap between academic research and practical applications in the agriculture and food industry. Her multidisciplinary approach, combining scientific expertise with hands-on experience, has led to the development of innovative food products and processes that meet consumer demand for nutritious and sustainable options.

Stella Despoudi is Senior Lecturer in Food Supply Chain Management & Logistics at the University of Western Macedonia, in Greece. Prior to this Stella has been working for Aston Business School, Warwick University, Coventry University and for Loughborough University’s School of Business & Economics. She holds a PhD in Food Operations and Supply Chain Management from Loughborough University’s School of Business and Economics. Stella’s research expertise lies in the following research areas: Circular food supply chains, supply chain resilience, industry 5.0, honey supply chain, food waste and food sustainability. Currently she works on multi-partner projects related to food supply chain resilience, climatic changes, and Industry 5.0. She also works as food supply chain consultant and she is co-owner of a honey processing company called Melizin. She has been the lead investigator in research projects related to Food Supply Chain Management. Some examples are: ‘Sustainability, Resilience, and the Impact of Industry 5.0 in the Food Supply Chain’, ‘Towards Sustainable and Resilient Fresh Produce Supply Chains in the Greece: A planetary boundaries perspective’, and ‘Food Waste and Food Losses in the Upstream Food Supply Chain’. She is Teaching Fellow of the Higher Education Academy and member of Production & Operations Management Society, and European Operations Management Association.

Dr Zainab Idris is currently the Deputy Director General (R&D) of MPOB. Dr Zainab Idris was born in Penang, Malaysia in 1965. Zainab obtained her BSc (Chemistry) from Laurentian University of Sudbury, Ontario, Canada in 1988. She served as a Production Chemist in Rubbered (M) and Rubber thread (M) Sdn Bhd, companies under IGB Group for 2 years. She then joined Palm Oil Research Institute of Malaysia (now known as MPOB) and obtained her Master in Science from University Putra Malaysia (UPM) in 1998. She then obtained her PhD in Chemistry from UKM in 2010. Zainab, holds a position as the Director of Advanced Oleochemical Technology Division (AOTD) of Malaysian Palm Oil Board (MPOB) since 27th July 2016 – 9th August 2019. After more than 20 years in Oleochemical Research, she recently obtained her Master of Business Administration from University Kebangsaan Malaysia-Graduate School of Business (UKM-GSB). Technically, she specializes in a wide area of applied sciences focusing on developing new molecules from oleochemical product through organic synthesis and process improvement and optimization. She also specializes in innovation of R & D products and services developed by MPOB for the benefit of the Malaysian Palm Oil Industry.

Wesley N. Osburn is an Associate Professor at Texas A&M University appointed in the Department of Animal Science. He has a teaching and research appointment in Meat Science with a specific focus on value added meat processing. His outreach efforts include assisting the meat and poultry industry with processing systems troubleshooting and conducting value added processed meat workshops. His teaching interests include value added processing, food safety, quality assurance and team problem solving. Dr. Osburn’s research program focuses on the development and application of processing technologies to increase the value of meat and meat products; utilization of meat by- products; exploring techniques to improve meat quality consistency and palatability; improving meat protein functionality and development of intervention strategies to improve the safety of meat products. He has gained international experience through conducting educational programs and collaborative research in Mexico, South Korea, Canada and Europe and has served on military deployments to the Middle East. Dr. Osburn received both his BSc. and MSc. degrees from Texas A&M University and his Ph.D. from the University of Nebraska-Lincoln. Dr. Osburn served as Associate Head, Academic Programs, Department of Animal Science Texas A&M University from 2016-2019. His teaching impact is providing targeted instructional delivery systems for a variety of interested stakeholders allows the efficient transfer of scientific knowledge for practical problem-solving applications promotes critical thinking and decision-making skills for the meat and poultry food safety and quality issues. His research impact is developing alternative meat curing systems. His research has generated nitric oxide by activating the nitric oxide synthase system (NOSs) with an essential amino acid in post rigor meat without the addition of supplemental nitrite. This alternative curing system may reduce the health risks associated with current curing methods, without compromising product safety and stability. This research is funded by USDA-NIFA AFRI project 2021-09606, and the submission of U.S. Utility (Pending; under review at USPTO), App. No.: 17/783,557. USDA-NIFA AFRI grant (Co-PI) 2023-67017-39044 seeks to develop a model for pathogen reduction to assist small processors in validating their processes in the manufacture of fermented, uncooked, dried salami. His outreach impacts include the conduct of a variety of workshops addressing food safety and quality issues through the application of pre- and post-harvest technologies. Certified Hazard Analysis Critical Control Point lead instructor as well as consulting with various meat and poultry industry representatives to solve food safety and quality-related issues. His international impact has been providing technical assistance provided new information/methods to develop strategies to address meat and poultry issues either through the development of research ideas and/or innovative manufacturing processes. He served as a Food Sanitation and HACCP Technical Advisor for the Afghanistan Value Chain-Livestock Project (USAID), Kabul Afghanistan (2020), and provided technical assistance provided to the Kuwait Institute for Scientific Research (KISR), Kuwait City, Kuwait and on behalf of the US Meat Export Federation in Mexico, Colombia, Peru and Chile (2015-19). His awards include the 2016 American Meat Science Association Meat Processing Award, 2005 American Meat Science Association Achievement Award and 2002 Young Animal Science Leader Outstanding Teacher Award – Midwest ASAS.

Murat Dogdubay born in Inegol, Bursa, Prof. Dr. After completing his undergraduate education at Balikesir University School of Tourism Management and Hotel Management in 1998, Murat Dogdubay completed his master's degree in 2000 and his doctorate in 2006 in the Department of Tourism Management and Hotel Management at the Institute of Social Sciences of the same university. During his master's degree, he started academic life as a Research Assistant at Balikesir University, School of Tourism and Hotel Management. Following his doctoral education, he became an Assistant Professor in 2006, an Associate Professor in the Department of Tourism Management and Hotel Management in 2013, and Prof. Dr. received their titles. In different periods, he served in different administrative positions, including Deputy Director of the Institute of Social Sciences, Director of Erdek and Kepsut Vocational School, and Deputy Dean of the Faculty of Economics and Administrative Sciences. He also served as a referee in national and international journals and as a member of the scientific committee and organizing committee in scientific meetings. He has been a participant and trainer in different projects, including those prepared with European Union funds. He has articles in the field of tourism, especially food and beverage, gastronomy and technology, papers in national and international scientific meetings, national and international book chapters and books.

Dan Sobieraj is a recent graduate from the MSc Architecture, Urbanism, and Building Sciences programme at the Delft University of Technology (TU Delft) having specialized in Architecture. His Master’s thesis focused on reimagining future urban landscapes to create a symbiotic relationship between the food system and spatial design. While studying in the Bachelor of Architectural Science program at Toronto Metropolitan University (formerly Ryerson University), Dan developed a strong interest in sustainability and authored 3 scientific journal articles about Building Information Modelling (BIM) and building energy simulation, and presented his research and design projects at multiple international conferences. Additionally, with his colleagues, he built a tiny house on wheels as a housing prototype in response to Canada’s housing crisis. Dan received the Ingenium Group Jack Lemay Memorial Award and the Federation of Chinese Canadian Professionals Education Foundation Award for his tiny house and undergraduate design projects. After completing his Bachelor’s graduation project about an urban community agricultural hub in Toronto, he decided to become a farmer in Australia to gain first-hand experience. Having months of experience as a fruit picker and farmhand, Dan realized that the separation of the food system from urban areas created many problems, and he saw new research opportunities. His Master’s thesis project aimed to better understand how the synergistic integration of food system processes with urban functions through architecture can create a more liveable and sustainable development of agri-food business parks. His thesis project was nominated for Archiprix 2022 at TU Delft and he received the Canadian Scholarship Trust Foundation Founders’ Award. Throughout his studies and following graduation, Dan has participated as part of Team SUM in the Solar Decathlon Europe 2022 where they won third place. He is currently working as a BIM Engineer at Daiwa House Modular Europe.

Ahmed S. Zahran. Professor of food microbiology, Minia University, Egypt . Graduated from the University of Edinburgh (UK), Department of Microbiology. His main area of interest is probiotic foods and functional foods. Published more than 80 research papers in the field of bacterial enzymes, probiotic foods, functional foods, and antibacterial substances isolated from lactic acid bacteria. He has expertise in evaluation and a passion for improving the quality of probiotic foods. H supervised 30 graduate students in the field of food microbiology, Microbial biochemistry, and symbiotic foods. He teaches both undergraduate and postgraduate students courses in fermentation technology and biochemistry, microbial enzymes, food poisoning, and probiotic foods.

Dr Marija M. Takic is a Senior Research Associate at the Institute for Medical Research at the Center of Research Excellence in Nutrition and Metabolism. She obtained a PhD in Biochemistry at the Faculty of Chemistry, University of Belgrade in 2016. Dr Takic has participated in 5 national, 5 international projects and in a bilateral project with Slovenia. She is a co-author of 37 peer-reviewed papers and a book chapter. Dr Takic has a documented record of extensive hands-on experience in a wide range of methods, including gas-liquid chromatography for the analysis of fatty acid profiles, in vitro models for determination of antioxidant activities including a cell cultivation one, spectrofluorometric for investigation of protein-ligand interaction, spectrophotometric methods for following of pseudo-first-order reaction. Dr. Ofir Degani completed his Ph.D. at the Technion-Israel Institute of Technology (Haifa, Israel), specializing in genetic engineering approaches in phytopathology. He carried out his post-doctoral studies at the Migal-Galilee Research Institute (Israel). Dr. Degani is the research group head of this institute's Phytopathology and Crop Protection Laboratory and a senior Tel-Hai College (Israel) staff member. His research is based on molecular, biochemical, and microbial approaches for understanding and preventing plant fungal diseases. Specifically, his research group is working on (1) developing biological, chemical, and agrotechnical controls for plant diseases, including Maize late wilt and stalk rot, Cotton charcoal rot, and Onion basal rot. (2) Study and manipulate the plant microbiome to provide an eco-friendly toolkit to protect plants. (3) Investigating the interactions between pathogens and their role in plant pathology to improve crop protection. Raffaele Pilla, Pharm.D., Ph.D., Doctor Europaeus, received his Master’s degree in Pharmacy at G. d’Annunzio University in Chieti-Pescara, Italy in 2005, where he also served internships at the Cell Physiology Laboratory and Molecular Biology Laboratory. Prior to his degree, he was an Erasmus Student at Faculté de Pharmacie de Reims in Reims, France. He received his Doctor Europaeus in 2010 from Pitié-Salpétrière Institute in Paris, France. Also in 2010, he received his Ph.D. in Biochemistry, Physiology, and Pathology of Muscle at G. d’Annunzio University in Chieti-Pescara, Italy. He was hired as a Postdoctoral Scholar in the Department of Pharmacology and Physiology at the University of South Florida in Tampa, on two research grants respectively funded by the Office of Naval Research (US Navy) and Divers’ Alert Network. He has written and lectured widely on his experiences. Dr. Pilla has been involved in ongoing research at the University of South Florida with the use of ketone esters. The initial work, funded by the Office of Naval Research, focused on using ketone esters to prevent CNS oxygen toxicity. Dr. Pilla is working to coordinate efforts in the United States and Italy to expand the ketone ester research to other conditions such as epilepsy and cancer and its use as an alternative metabolic fuel. Dr. Pilla has also served extensively in various international medical missions, orphan and homeless programs, emergency medicine rescue and training, and animal rescue and fostering.
